If you know your Korean food well, then you must know how Kimchi is used in a variety of different Korean dishes. Kimchi is great not only on its own, but also as a side dish, and as an ingredient for soups and other dishes.
The wide variety of Kimchi is created by combining different main vegetable ingredients with various seasonings to enhance their flavor. Cabbage, radishes, and spring onions are commonly used, but new variations of Kimchi are constantly being created. Their taste can vary depending on their region of origin and the seasoning used. While Kimchi is typically spicy, there is also white Kimchi which offers a milder alternative.
There are three parts to preparing Kimchi. The first part is salting the vegetables to draw out their water, after slicing them to increase the surface area. This helps preserve them by preventing the growth of harmful microorganisms. The next step is then draining the water released from the vegetables and mixing in seasoning ingredients. Commonly used seasonings include chili powder, scallions, garlic, ginger, and salted seafood called ‘jeotgal’ which create a base. Last of all, we let the fermentation do the magic and create the delicious flavor!
Since it is a fermented food, Kimchi can be preserved and consumed for a long time, just like cheese and wine.
